Its 7:00pm on a Tuesday night and I think, I need something yummy for work tomorrow, so I decide that I’m going to make my muffins, but I need to modify the recipe to include Rachel’s Fabulous Yogurt. I grab all the ingredients and then decided I would like to add some more fruit and some white chocolate chips, so off I pop to the local store to grab some peaches and chocolate. What I am about to see I am not prepared for. I drive past the local KFC and the drive in section is full and so is the inside shop… Did I miss something, its Tuesday night!!!! Why aren’t these people at home cooking dinner? Why are they out eating takeaway. Don’t get me wrong, I like a good take away once a fortnight on payday, or occasionally when I don’t feel like cooking (that’s not very often). Have we not learned anything??? Why don’t people want to know what they are putting into their bodies? I love fat and sugar and don’t think I could give up either, but if I’m going to eat it, I want to cook with it and put it in my food so I know where it is and how much of it I am eating! Then I drive around to the shop and the Chinese takeaway is overflowing and three Pizza Delivery guys are leaving Dominos with Pizzas. I’m sorry for the rant, but honestly I wanted to throw up! No wonder so many of us are unhealthy and getting sick. No wonder people have no money to spend on important things. We are eating ourselves into early graves and spending money on food, when there are perfectly good healthier options to be made at home! RANT OVER!
So any way here are my muffins using Rachel’s Gourmet Yogurt. Make sure you only use 1 cup of chopped peaches. I put a few extra in mine and while lovely, some had more fruit than batter 🙂
2 cups of SR Flour
2 lightly beaten eggs
1 x 560g tub of Rachel’s Peaches and Vine Ripened Gourmet Low Fat Yogurt
¼ cup of oil (I used organic safflower) any light oil will do
¼ cup raw sugar
1 cup of chopped peaches
100g of white chocolate
1. Pre heat oven to 180 degrees Celsius
2. Put your favourite muffin patty papers into tins
3. Put all ingredients into a bowl and mix until JUST combined
4. Place just mixed ingredients into the prepare papers (should make 18 – 20)
5. Cook in the oven for 20 – 25 minutes
6. Cool on the cake rack
Enjoy these muffins irresponsibly, because lets face it, they have yogurt and fruit in them, so in fact you could eat them for breakfast and be completely justified! ENJOY!
